Balsamic Glazed Chicken
Servings: 3
Calories Per Serving: 358

2 tbsp oil
3 chicken breasts, boneless and skinless
1/2 cup chicken broth
3 tbsp balsamic vinegar
2 closed garlic, minced
1 tbsp honey
1 sprig fresh rosemary, chopped
salt and pepper

Season chicken breast with salt and pepper. In a small bowl, combine chicken broth, balsamic vinegar, garlic, honey and rosemary. Set aside.

In a large skillet, heat oil over medium high heat. Place chicken topside down in skillet and cook until golden, about 4 minutes. Flip chicken and cook for an additional minute. Pour balsamic mixture over chicken, reduce heat to low, cover and simmer for approximately 10 minutes or until chicken is cooked through. For best results, flip chicken a few times through cooking process.

Serve immediately or store in the refrigerator for up to 3 days. Enjoy!

  2. we made this for dinner tonight and it was DELICIOUS!!! The sauce took a little longer to reduce but the flavors were fantastic. We served it with a warm pasta salad with baby spinach, grape tomatoes and little cubes of fresh mozzarella. YUM!
