  2. I love this recipe for real Mexican Chilaquiles, if you are asking are eggs OK well this classic recipe needs not use eggs. As you can clearly see this recipe does not use egg products, but if you want to change your Chilaquiles recipe to include eggs that would be your choice. Thanks for checking in!

  3. Your right I was born and raised in Colorado and they do indeed have some of the best Mexican restaurants. Never eaten in the The Casa Grande but the next time I am in Estes Park Colorado I must check it out. Thanks for your comment on my Mexican Chilaquiles recipe!

  6. These Chilaquiles are not the average Mexican recipe I am used to. The Chilaquiles
    Verde are much more of the normal recipe I found in Central and Western Mexico. But you might think they look delicious ,they are some of my favorite comfort food. Thanks for checking in and keep on cooking!

  7. After spending so much time in Mexico I learned a lot about the people, language, and Mexican cuisine. In Winter Months I might go down to Mexico for weeks and rent a Vila just to read and think about the things that might of been. But one thing I learned is I love Chilaquiles for breakfast with all of that cheesy goodness. Most of the time I spent on the West coast of Mexico in Manzanillo Mexico far from the madding crowds. I could go on but thanks for your comment and keep on cooking!
