Coconut Tahini Sauce:
2 tbsp tahini or sub another nut butter
3/4 cup coconut milk
1 tsp sriracha or hot sauce
1 tbsp sugar or liquid sweetener
1 tbsp soy sauce or tamari
lime juice to taste

Pasta:
2 cup red peppers and mushrooms
1 tsp each dried herbs like parsley, basil
1 (14 ounce) can tomato sauce
14 ounces water
2 cups penne pasta or pasta of similar size
1 tbsp vegan cream cheese
1 tbsp chopped fresh basil (optional)
handful of spinach or kale

Pulled BBQ carrots:
2-3 carrots grated or julienned
1/4-1/2 cup bbq sauce
shredded vegan cheese
bread + vegan butter

  1. This week, I finally made the Barbecue "pulled" carrot sandwich and I SERIOUSLY can't believe how GOOD they are!!! I am originally from Tennessee so going Vegan was not easy in terms of missing all those down home barbecue meals. This is truly a wonderful replacement and something that I could confidently make for friends and family who are so skeptical of a whole food, plant based diet. THANK YOU so much for bringing this recipe to my attentions. I just made it for my 17 year old (not vegan yet) daughter and she absolutely loved it! I put some red onions in with the carrots when I steamed them and I also added some dill pickles which was a nice additional texture and taste.

  2. thanks for sharing this! I tried your coconut sauce with almond butter (instead of tahini) and it was AMAZING! For veggies I used onions, carrots, red bell pepper, broccoli, and zucchini plus garlic then plated with brown rice and spinach. YUM! felt super gourmet and so satisfying. I also think this would also be great with soba or other noodles but def spinach too. I add spinach to EVERYTHING and it makes such a difference in the texture, which I love. GREAT VIDEO, woman! THANK YOU :-)

  5. I also like going for a walk but at night with my boyfriend when it's calmed down and quiet out. It could be in any other season but we've just recently incorporated this into our day this winter

  6. coming from an extremely italian town, hearing her pronounce pasta "p aa sta" makes me slightly uncomfortable. we pronounce it "pah stah" obviously no offense to her or anyone who says it that way, but idk anyone else noticed that😂

  7. That BBQ sandwich looks AMAZING.
    Favorite winter activity: snuggling in a warm blanket with a warm beverage and staying far away from the cold as possible. (I grew up in South Florida and now I live in Philadelphia so I certainly am not a cold tolerant person! ha!)
