1lb extra lean ground beef

1lb ground lamb

2 teaspoons sweet paprika

1 teaspoon ground coriander seeds

½ teaspoon cumin

½ teaspoon cinnamon

¼ teaspoon cayenne pepper or to taste

¼ cup parsley, chopped

6 garlic cloves, chopped

salt and pepper to taste

    I just made and ate this five minutes ago…it's a great recipe…I'm armenian-american and my grandma would make kofta all the time…she would also say "yes, yes, yes…" just like Victoria…anyway I added in half a diced onion to the meat mixture as well…don't overcook…it needs to be super juicy and not dry…I took off the grill and drizzled a tiny bit of garlic-yogurt sauce on top …it was soooooooo good…thanks Victoria…I love your cooking…ooxx

  2. you would preferably need special 2-3 cm wide skewers for kofta, koobideh or adana-like kabobs so that the meat doesn t touch the grill… also when you put the meat on the skewers you should put your hand in some warm water first 🙂
