  1. because a Pit is like a steam bath of flavor. also in this case, the meat on the salmon can retain the moisture and searing the skin on the pan prevents the salmon from sticking to the BBQ grill. you could just put the meat on the grill on the side without the coal, but the skin wouldn't be as crispy. A well seared salmon skin is especially good to eat with rice, you don't have to throw it away for the dogs.

  2. Ahhh… love this channel. Going to buy some salmon and an onion… can already smell it grilling. Might I addd, you need a good pecan/hickory wood mix to cook over as well. Good southern style grillin'.

  4. u want those things u love about salmon? go to a sushi bar and eat it raw, u may never want to eat it cooked again , (raw leaves in all the flavor and nutrients
