Recipe:
In a blender add:
1 Cup (1/4 liter) reduced sugar OJโ€ฆor milk of choice
1 Medium sized banana (100g)
1/3 Cup (90g) unsweetened applesauce
2 Egg whites (70g) egg substitute
1/4 tsp Vanilla extract
Blend Well

Dry ingredients
In a medium sized bowl add:
1 1/2 Cups (180g) self rising flour
2 Scoops (60g) Vanilla whey protein powder
1 Tbsp (12g) sugar substitute
Pinch of salt
Mix to combine

Add wet into dry and mix until smooth
Add batter to a muffin tin coated in baking spray
Bake @ 350 degrees for 20-25 minutes

Macros Per Muffin (makes 10):
110 Calories, .2g Fat, 19.4g Carbs (1.5 fiber), 8.9g Protein

I love your recipe and tried this but I turned out really bad, I followed the recipe exactly (except I substituted the oj for milk) and I had to keep them in the oven for about 15 more minutes than you said and they were still soggy and partially cooked in the middle I don't know what I did wrong but this recipe just turned out bad

    I highly recommend using the OJ in these it's perfect for summer. You also should probably sing that song before eating them. lol ๐Ÿ™‚
