” MACHLI KA SALAN/Fish Curry ”
Mix Red emperor ½ kg +/ 3 fillets cut into big pieces with ½ ts full salt, 1/3rd turmeric, 4tbs approx. lemon juice and rest it for 15-20 mins.
In a pan add some cooking oil and fry the fish. Don’t over cook, it has to be raw inside.
Add some oil in a cooking pot, add thinly sliced 2 md onions and let them fry until pink. Add crushed ginger 1 inch and handful of garlic, thinly sliced 1 L tomato and let it cook. When the tomato is bit soft, add ½ ts full salt, add bit of turmeric, ¾ ts chilli powder, ¾ ts cumin seeds, ¾ ts coriander powder and fry. Add 1 cup water, cover and cook until the oil separates. Add the fish and turn the heat to low, cover and cook it for sometime. Add fresh coriander and green chillies and 1 cup water and cook until it becomes thick gravy, oil separates. Add madras curry powder (optional) 1/3rd ts.
