Meal Prep Recipe: Healthy Seafood Dinner

2 Cups of baby sweet pepper
1 Cup of okra
2 Small Roma tomatoes
½ of a Spanish onion
3 Tablespoons of smoked Mackerel (optional)
1 Cup of green frozen peas
Water (deglazing)
2 Cups of Course bulgur
3 Cups of vegetable stock
1 Pinch of saffron
1 Lemon juiced
10 oz. of Snapper fillets
1 Tablespoon Olive oil
Kosher salt & cracked black pepper (to taste)

2 lbs. of Mussels
1 ½ lbs. of Calamari
1 ½ Tablespoons of olive oil
Kosher salt & cracked black pepper (to taste)
½ lb. of Shrimp
2 Tablespoons of parsley

  1. What I was looking for was on reheating seafood that was meal prepped earlier. Is it best to reheat in microwave or oven? Should I freeze it first then thaw day before I eat it, or is it alright to keep it fridged for a couple days until I eat it? I am looking for the most convenient way to meal prep seafood without having to eat in dry. Thanks for any info.

  2. Seems like you're really skilled at recipes with seafood. Wondering if you could do a seafood 101 video (or series)? Something very basic like how to clean & prep different items, easy cooking methods for different types, basically seafood for dummies. I didn't grow up cooking any kind of seafood but I would love to incorporate it more…I'm just intimidated by the preparation and worried I will accidentally poison myself or something! Haha. No problem if this isn't your thing but since you usually ask for video ideas/comments I thought I would ask.
