  1. Fresh water chestnuts are many times better than canned. They are a slight pain to peel properly, think kohlrabi where the layer under the peel can be a bit fibrous and unpalatable, but once you have them peeled fresh water chestnuts have a great crunch and a near coconut milk type of flavour.

    As always though, canned items work in a pinch.

  3. I made this last night and they tasted AMAZING but they looked….like gray/beige pieces of human brain. :O( I think the problem was that I chilled the mixture for 24 hours, so some air go to it. Next time I will only chill for 1 hour.

  4. Would this work ok if I (carefully) placed them in a deep fryer? Not that I can't do it in a pan, but I already have fryers available that I don't have to clean.
